Preparation:

Wash the potatoes thoroughly with plenty of water. Then, cut them into slices without removing the skin.

In a more or less large glass container, pour milk, grated nutmeg, dehydrated mint, and salt. Mix well and reserve.

  • 4 salmon fillets (700 g).

  • 1/4 teaspoon of sugar (2 g).
  • 1/4 cup olive oil (60 mL).
  • Fresh mint sprigs to decorate.
  • 1 tablespoon of olive oil (15 mL).
  • 2 tablespoons of lemon juice (30 mL).
  • 1 tablespoon chopped fresh mint (15 mL).
  • One teaspoon lemon zest (5 mL).
  • 1 tablespoon shallots, finely chopped (15 mL).
  • 2 teaspoon of freshly ground black pepper (2.5 g).

Preparation:

Mix the lemon juice, sugar, lemon zest, 1/4 teaspoon of salt and 1/8 teaspoon of ground black pepper in a small bowl.

Then, add 1/4 cup of olive oil mix it little by little.

Then add the tablespoon of chopped shallots and the spoonful of chopped fresh mint. Reserve this mixture.

Season the salmon fillets with salt and 1/4 teaspoon of pepper.

In a frying pan, place the tablespoon of olive oil and heat over medium-high heat.

Place the salmon fillets in this pan and sauté until they have the desired level of cooking.

Remove the salmon from the pan and put them on a plate. Sprinkle with the mixture you prepared earlier.

If you wish, decorate the presentation with mint on branches.
