Persian cuisine seems to be the next to catch on, but in a way much longer see recipes for the network, especially with the rise of the cuisines of the Middle East and Middle East. Ingredients for 2 people

4-6 chicken drumsticks with skin
1 large onion
1 clove garlic
1 cinnamon stick
1 tomato or tomato paste
3 tablespoons natural
1 pinch of saffron
1/2 teaspoon ground cumin
4-5 dates
3 dried apricots
1 handful of raisins
1 cup water or broth
1 lemon
Sliced ??almonds
1 bunch fresh chives
Black pepper
Extra virgin olive oil
Making chicken Persian style

Remove any excess fat and chicken feathers. Heat some olive oil in a large skillet and brown the drumsticks well on both sides. Add salt and pepper and remove. In the same oil, fry the chopped onion with the clove of garlic and rolled cinnamon stick.

After 5 minutes, add the tomato, saffron and cumin. A few laps and incorporate pitted dates, dried apricots and raisins. Return the chicken to the pan, cover with water or broth, bring to a boil, cover and reduce heat. Simmer for 30 minutes.

Uncover, add the lemon zest and 1 tablespoon of juice, and cook about 5 minutes, until the sauce reduces fine. Remove the cinnamon stick and serve with chopped chives and a handful of almonds.


The flavors of this dish of chicken Persian style is enhanced if left to stand a while, but its better serve almonds, lightly toasted, at the moment you are going to consume, to retain their crunchy texture. Garnish rice can be cooked simply, letting loose, or grain flavored with spices or a little butter.
